small onion, diced and divided
garlic clove, minced
butter
can of drained pinto beans
pinch of salt
pepper jack cheese
Crunchmaster crackers
Sour cream
tomato, diced
avocado, diced

Step 1

Preheat oven to 350. Place foil on baking sheet. Saute' onion and garlic in small amount of butter, until soft, add beans and cook for 5-8 minutes. Put crackers on baking sheet and top with bean mixture and cheese and cook until cheese melts (about 3 minutes). Spoon dollop of sour cream on top. Sprinkle with onion, tomato and avocado.
